Jello Poke Wedding Cupcakes.....

I LOVED making cupcakes for Ashley and Chad's wedding this week! I made the frosting ahead of time (and made too much). I saved most of these boxes from a wedding I worked last month.





I got everything organized and put together two mixes at a time and tried to get the next two ready to mix when I had a batch in baking.







Here are my bags of frosting. I had a medicine syringe to 'poke' the jello in the cupcakes. I mixed two small boxes of jello with 2 cups boiling water at a time. That worked great. That took about four hours after I got home from work on Friday.


It took about three hours on Saturday morning to decorate. I love the frosting....it shimmered like 'pearl'. I gave it just the slightest sprinkle of half lime green sugar and bright blue sugar. The jello was blueberry and lime... a little over 300 cupcakes of each. =)






It took 16 minutes to bake four pans (48 cupcakes) I popped them right in these containers to cool. It took four hours to do 632 of them. It took four hours to poke them all with jello. Saturday morning it took about 3 hours to frost them all
